You can absolutely change the booking flow of your online booking from, under "Set Up Page" > "Online Booking Forms" and click on “Booking Flow”:

This would then have a pop up page in the right hand side, which allows you to set the sequence of your booking flow as shown below:

You also have the option to change the available times of your online booking form in month or week view as shown below:

Hit “Save” to save changes made.
