From your Flexbooker account, go to your "Set Up" page, and scroll at the bottom part of the page, click and choose the "Booking Statuses" label:

This would allow you to add a new customized booking status:

You can edit the name of the status, description, background color and text color:

Make sure to click on the "Save All Statuses" button to save any changes.
